I LOVE fall recipes. I especially love anything that involves pumpkins. So far this year I have made Pumpkin pancakes, Pumpkin Chili, and Roasted Pumpkin Seeds. Our family also enjoys pumpkin bread, pumpkin mufins, pumpkin risotto. What are your favorite pumpkin recipes? I would love to add more to my collection.
My Favorite Roasted Pumpkin Seeds...
1 1/2 C Pumpkin Seeds (Cleaned and Rinsed)
2t Garlic Powder
1t Salt
1t Crushed Red Pepper
1/2t Fresh Ground Pepper
Make sure your pumpkin seeds have dried after cleaning them otherwise they will not roast up as well. Preheat oven to 350. Spray a cookie sheet with nonstick cooking spray. Add all ingrediants to cookie sheet and toss to combine. Bake for 15-20 minutes, until seeds are crispy and a light golden brown. Use a wooden spoon to stir the seeds and release any seeds or spices that have stuck to the pan. Let seeds cool before serving or storing.
